Hummingbird Bundt Cake - Gluten Free

  • Hummingbird Bundt Cake-Gluten Free
Ingredients
  • 1/2 C unsalted sweet cream butter, softened
  • 3/4 C sugar
  • 1/4 C brown sugar, packed
  • 2 large eggs
  • 2 1/4 C gluten free flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 C mashed bananas
  • 1 tsp pure vanilla extract
  • 1 tsp almond extract
  • 1 tsp cinnamon
  • 1 8oz can crushed pineapple
  • 1 C sweetened shredded coconut

  • 1 Can of your favorite gluten free cream cheese frosting
Instructions
    Cake Directions
  1. Preheat your oven to 350F degrees and grease your bunt pan with pam spray
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon and salt and whisk until combined
  3. Using a standing mixer, cream the butter and sugars until creamy and fluffy
  4. Mix in the eggs and vanilla
  5. Gradually mix in the dry ingredients and mix until combined. Batter will start to look really dry and crumbly
  6. Add in the pineapple and coconut mix until combined
  7. Add in the mashed bananas
  8. Pour batter into pan and bake for 35-40 minutes or until a toothpick or a knife comes out clean
  9. Let sit on a wire rack to cool completely, flip onto a plate. Frost with your favorite frosting.

Banana Bread (gluten free of course)

Banana Bread
 
2 cups gluten free flour
1 teaspoon baking soda
¼ teaspoon salt
3/4 cup butter
1 1/2 cup sugar
2 eggs (beaten)
1 1/2 cups bananas, mashed (3 medium)
1/2 cup buttermilk
1 tsp Vanilla
1 tsp Almond flavoring
 
Cream butter and sugar. Blend in bananas, eggs, vanilla and almond flavoring. Combine flour, soda, and salt together. Add flour mixture to banana mixture alternating with the buttermilk. Pour into a greased loaf pan. Bake at 325 deg. for 1 hour and 15 minutes.

Cherry Pecan Banana Muffins


Cherry Pecan Banana Muffins
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 eggs
1 cup mashed super-ripe bananas, usually 3-4 medium bananas worth
1 tsp. vanilla extract
2 cups gluten free flour
1 tsp. baking soda
1 tsp. salt
1/3 cup toasted chopped pecans
1/2 cup maraschino cherries, drained well, chopped
Preheat oven to 350 degrees F.  In a large mixing bowl, using an electric mixer, cream sugar with butter until light and fluffy; add eggs, one at a time and beat well.  Add bananas and vanilla and beat again, making sure batter is well combined.  In a small bowl, combine flour, baking soda, salt, pecans and cherries.  Using a spatula or large spoon, gently fold the flour mixture into the banana mixture, just until ingredients are barely combined.  Don’t over mix!  Divide batter between 12  well-greased muffin tin cups and bake, uncovered, for approx. 20 minutes or until muffins are golden brown and spring back to the touch on top.  Remove from oven and place muffin tin onto a cooling rack.  Remove from muffin tin and store in an air tight container.
Makes 12 fat muffins

Healthy Soft Serve??? Shut the front door!!!!

    This was yet another find on Pinterest. A recipe for soft serve ice cream using only bananas and peanut butter!! I had to try it, mostly just because I didn't believe it would be very good.
      Well they showed me..........it was yummy!! It does have a banana flavor, so if you aren't a banana fan this may not be the recipe for you. I however do like bananas and LOVE peanut butter.
       So here is a link to the original recipe that I found via Pinterest Peanut Butter Banana Soft Serve and now on to the recipe that I ended up making. We all know I can't just make a recipe as it's written. I HAVE to make changes ha I always think I can make things better with my tweaks. Which sometimes works out in my favor.....and well we won't talk about those other times :)
            I used my magic bullet to make the soft serve. I was just making one serving for me to try so I didn't need a huge amount.
     Early on in the day I diced two bananas and put them into the freezer. That pretty much concludes the prep work for this recipe. Easy huh?

           Peanut Butter Soft Serve
2 frozen diced bananas
1-2 T. Peanut Butter
Cold milk (to make desired consistency)
1T Hershey Syrup

Place the bananas, peanut butter, and 2-3 T. Milk into the magic bullet (or other food processor). Blend for 20-30 sec. Check the mixture to see if it is smooth and creamy (no banana chunks). If it needs more mixing then mix it some more. You can also at this time add in the Hershey Syrup. Mix until the consistency is creamy like soft serve. You may need to add more milk. Once creamy....enjoy!!!

This recipe is super healthy. Bananas are full of fiber and potassium. They are low in fat. I hope you all enjoy this yummy healthy easy recipe!!
