Leftover Baked Potatoes Turned into Amazingness!
I could possibly be the only person on Earth that does this. Sometimes I have leftover baked potatoes. I may decide to make extra "just in case", or someone doesn't eat their allotted tater. Sometimes I even make extra on purpose. I think from now on I will be making extra on purpose ALL THE TIME!!
I found this recipe the other day on Pinterest (I know I have an addiction, I'm looking into a 12 step Pinterest program, no worries). However this recipe has you cook the potatoes from raw. Which is great, however I had leftover baked potatoes that I hated to waste. So I thought I would give it a shot with my leftovers. Here is the original recipe: Cheesy Ranch Potatoes It is a great recipe....but of course I had to do it "my way". On to the recipe..............
Leftover Loaded Potatoes
3-4 leftover baked potatoes
2 T Butter or Margarine
Cooking Spray
4-5 T Ranch Dressing
1/2 C. Shredded Cheese
Bacon Bits or leftover cooked bacon
Instructions:
Cut the leftover potatoes into small chunks. Dump them into a well oiled pan (I used a loaf pan). Top with the 2T butter diced into small pieces. Drop the butter on top of the diced potatoes. Bake at 400 Deg. for about 10 min. Take out and Stir. Bake another 10 min. Remove from oven. Stir again and then top with Ranch Dressing, shredded cheese and bacon bits. Bake for another 10 min. Serve and enjoy!
